Kitchen Assistant
The Dough Bros, recognised as one of the best pizza destinations in Ireland, is searching for an experienced Kitchen Assistant to join our team. This is an excellent opportunity for someone passionate about working in a fast-paced culinary environment Responsibilities Dough Management: Making large quantities of Dough according to our specific recipe. Storing dough for 72 hours and checking it to ensure it is fermenting at the correct pace. Ensuring the environment the dough is made in and stored in complies with the specific temperatures and times needed to produce our dough. Preparation of the food items used on our pizza. This includes cooking meat, prepping cured products, prepping vegetables, prepping multiple types of cheese. These can be grated, cubed or shredded depending on the product. Follow the recipe lined out for each of these products to ensure the ingredients are always at the standard the restaurant requires. Also ensuring all HACCP guidelines are followed and recorded correctly. Responsible for taking in stock. Recording quantity and temperature in accordance with HACCP guidelines and storing correctly. Responsible for ordering stock and stock control. Making sure the quality of the goods coming in are of the highest standard. Managing stock rotation to ensure there is as little waste as possible and the pizza chefs are using the correctly dated ingredients. Knowledge of our suppliers and costs of goods. Keeping track of cost increases and keep communication with suppliers regarding best prices available for our stock. Knowledge of our seasonal produce. Ensuring we are using local farmers and produce when we can as well as having an alternative supplier for when seasons change, and local suppliers stock depletes. Training new staff to ensure they can prep and store some foods that require less management such as vegetables and potting up already prepared sauces and ingredients. Ensuring new staff comply with HACCP guidelines and fill our relevant temperature checks on shift. Cooking of Gluten Free Pizza. Ensuring there is a clean workspace for Gluten Free Pizza as well as managing the time in which it takes to cook according to the specific pizza. Ensuring you are a friendly person who can answer any questions customers have regarding our restaurant/food/company ethos etc. General cleanliness and organisation of kitchen space. Requirements Relevant degree in Culinary Arts (or specify degree if applicable) Additional professional training in food safety, sanitation, and high-volume cooking, ensuring compliance with industry standards. Experience in the food industry, with both front- and back-of-house expertise. Skilled in catering to large groups and managing high-volume orders with precision and efficiency. 1-2 years of experience as a Kitchen Assistant, with demonstrated leadership and kitchen management abilities. 1-2 years specializing in the pizza industry, including dough handling
